Quinoa for Dummies!


Summertime is in full swing and it’s time for a super simple crowd-pleaser of a salad. It’s vegan and full of super tasty ingredients. It has a nice blend of sweet, savory and a slight spicy kick. The main ingredient in this salad is none other than the super nutritional Quinoa.

Quinoa (pronounced keen-waaaah) is an ancient grain that is a complete protein. This makes it great for many sorts of vegan and vegetarian meals. The reason it is a complete protein is because it provides all 9 essential amino acids. Quinoa is gluten-free and cholesterol-free. And for an added bonus, it's also Kosher.

 I love Quinoa because it cooks up fairly quickly compared to other whole grains. And since it’s a complete protein, it’s very satisfying and filling. This whole grain is also very easy on the body to digest.

Try this simple and super flavorful salad for your next BBQ or dinner party and it’s super to be a big hit. Enjoy the super healthy Foodgasm that comes from this Curried Quinoa Salad. I know I did, and it was superb (wink)!
 
Curried Quinoa salad
  • 1 cup dried quinoa
  • 1 tablespoon sweet curry powder
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon salt
  • 2 cups water
  • 1 1/2 cups carrots, grated
  • ¾ cup dried cranberries
  • ½ cup green onions, thinly sliced
  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon olive oil (optional)
  • Salt

Directions
In a pot put the water, quinoa, curry powder, cayenne pepper and ½ teaspoon salt. Bring to a boil. Cover and turn down to a simmer. Simmer for 10 minutes. Remove from heat and let it sit for 5 minutes. Put quinoa on a sheet pan or large bowl to cool slightly. Fluff with a fork and add the shredded carrots, dried cranberries, canned chickpeas, green onions, olive oil (optional) and salt to taste. Serve at room temp or chilled.
